Rhapsody in Red is a mixed-culture sour aged in French oak barrels for just over a year. During this time, a symphony of organisms, including Brettanomyces, Pediococcus, and Lactobacillus, fermented this beer, generating a wide array of complex flavors and a gentle acidity. Three months of conditioning atop whole tart cherries contributed a rosy pink color and tantalizing aromas of cinnamon, fresh strawberry, and grape must.
