Foeder-Aged Sour Ale with Black Raspberry
Our second Luminary release of 2024 is a tart, wild ale first brewed in March of 2023.
It first fermented in French oak foeders and was spontaneously inoculated by a mixture of wild yeast and bacteria embedded in the wood grains. After four months, this young sour was racked onto 120 lbs. of local black raspberries from Nourse Farms located in Westborough, MA, It aged on these berries for an additional seven months, where it took on a lush, juicy flavor as well as a vivid magenta hue. The end result is a pleasing springtime sour, with a clean acidity met by a delicate, peppery funk. Drink fresh or cellar.
